簡単すぎる柴漬け
秋茗荷がたくさん採れたので、柴漬けを作りました。
夏野菜で作る柴漬けは、自然、みょうがも夏茗荷なはずですが、畑のみょうがは秋茗荷。
いつも、10月になってからたくさんつぼみをつけてくれます。
秋茗荷の方が、大きくて赤くて美味しそうなので、みょうがとしては、秋茗荷の方が好きですが、紫蘇は青じそ、きゅうりはハウスもの・・・など、この時期の柴漬けはなんちゃって柴漬けになってしまいますA^^;)
作り方も、夏に作った梅干しの時にできた梅酢で漬け込むので、とても簡単なもの^^
でも、もちろん、それなりに発酵して、それなりにとっても美味しいです。
簡単柴漬け
材料
- 3 本 茄子
- 3 本 きゅうり
- 6 個 みょうが
- 1 かけ 生姜
- 50 枚 青紫蘇
- 50 cc 梅酢
- 2 小さじ はちみつ
作り方
- 土生姜を千切りにします。
- 茄子、きゅうり、みょうがは繊維にそって5cmほどの長さに切ります。お好みの厚みで。茄子はアクが出やすいので最後に切ります。
- 野菜を保存袋に入れ、2%程度の塩を振り、重しをかけ下漬けします。
- たっぷりの水分が出て下漬けができたら、野菜の水分をぎゅっと絞り捨てます。
- 下漬けした野菜を入れた保存袋に青紫蘇を手でちぎりながら入れます。
- 梅酢を入れます。
- 味見をし、塩味が足りなければ梅酢を、甘みが足りない場合ははちみつをプラスします。
- 冷蔵庫に保存します。梅酢全体に馴染むまで重しをしておきます。
- 色がきれいに混ざるように、時々混ぜます。
Notes
梅酢は塩分が強いので塩辛くならないようギリギリの分量にします。
甘さの調整にははちみつです。
