鶏レバーのいちじくワイン煮
いちじくの赤ワイン煮を作ると、どうしても煮汁が残ります。
いちじくのエキス、赤ワイン、はちみつ・・・。
もったいない。
コンポートといっしょにいただいたり、アイスクリームにかけたり。
それでも残るので、あえて残して、
赤ワイン煮の煮汁で、鶏レバーのワイン煮に。
焼きいちじくを添えて・・・。
鶏レバーのいちじくワイン煮
材料
- 200 g 鶏レバー
- 1 個 いちじく
- 80 g いちじくのワイン煮の煮汁
- 醤油
- はちみつ
作り方
鶏レバーを炒めます
- 鶏レバーは、血合いなどを取り除き、食べやすい大きさに切ります。
- 鶏レバーに塩で下味をつけます。
- 鍋に油をひいて、鶏レバーを軽く炒めます。
いちじくのワイン煮の煮汁で煮ます
- 鍋から一度鶏レバーを取り出します。
- いちじくのワイン煮の煮汁を鍋に入れ煮詰め、醤油、はちみつで味を調整します。
- 鶏レバーを戻し、からめるように火を通します。
- 火が通れば、鍋を火からおろし、冷ましながら味を含めていきます。
いちじくを焼きます
- いちじくをやさしく洗います。
- いちじくを網でこんがりと焼きます。
いただきます
- 小鉢に鶏レバーを盛ります。
- 焼きいちじくを４等分し、小鉢に添えます。
