ずいきと京揚げのおひたし
里芋の葉柄「ずいき」。
スポンジのように出汁をたっぷりすってくれます。
京揚げと一緒におひたしにしました。
ずいきと京揚げのおひたし
材料
- 赤ずいき
- 京揚げ
浸し地
- 10 出汁
- 1 醤油
- 1 みりん
作り方
ずいきを湯がきます
- 鍋の入る寸法にずいきを切ります。
- ずいきの皮をはぎます。
- 酢を少々入れたたっぷりの水にずいきを一時間ほどつけ、落し蓋をしアクを抜きます。
- 沸騰したお湯にずいきを入れ２分ほど落し蓋をし湯がきます。
- 水につけ冷まし、4cmほどに切ります。
京揚げを油抜きします
- 沸騰したお湯に京揚げを入れ油抜きします。
- 水に落とし、油を除きます。
- 4cmぐらいに切ります。
浸し地を作ります
- 材料を鍋に入れ、ひと煮立ちしたら冷ましておきます。
いただきます
- 鉢にずいきと京揚げをあわせ、浸し地につけます。
Notes
赤ずいきは、アクの抜きが十分でないと白っぽくなります。
浸し地は、みりんのアルコールが気にならないなら、ひと煮立ちさせる必要はありません。
先に「煮切り」をしてアルコールを飛ばして準備しておいても良いでしょう。
