里芋の葉柄「ずいき」のごま和え
里芋の葉柄「ずいき」。
丁寧にアクをとると夏の一品に。
枝豆を添えてごま和えにしてみました。
里芋の葉柄「ずいき」のごま和え
作り方
ずいきを湯がきます
- 鍋の入る寸法にずいきを切ります。
- ずいきの皮をはぎます。
- 酢を少々入れたたっぷりの水にずいきを一時間ほどつけ、落し蓋をしアクを抜きます。
- 沸騰したお湯にずいきを入れ２分ほど落し蓋をし湯がきます。
- 水につけ冷まし、4cmほどに切ります。
枝豆を湯がきます
- 枝豆は枝から外し、塩を振ってもみ、よく洗います。
- 塩味が入りやすいように、枝豆のさやの端を切り落とします。
- 鍋に水と枝豆と塩を入れ、水から茹でます。
- 沸騰してから２分でザルに上げます。
- さやから豆を外します。
胡麻和えを作ります
- 和え衣の材料をすべて、固い場合は水などで調整します。
いただきます
- ずいきをごま和えの和え衣で和えます。
- 鉢に盛り込み、枝豆をちらします。
